Bran Muffins

By request via facebook...the best refrigerator bran muffin recipe. It is my favorite because we used to make them as kids for hot breakfast in the morning. We'd turn on the oven when we woke up. My mom would have a container in the fridge and my brothers and I would dole out batter for a dozen muffins. By the time we were ready for school and my parents were up we'd have a hot breakfast! They are the best with butter and honey!

2 c. of All-Bran Bran Buds or Bob's Red Mill Wheat Bran [the original recipe called for 100% Bran cereal which is not on the market anymore so the recipe isn't quite the same.]
2 c. boiling water
1 c. shortening
2 c. sugar
1 tsp. salt
4 eggs
1 qt. buttermilk
5 c. flour
5 tsp. baking soda
4 c. All-Bran Original cereal

Pour boiling water over the 2 c. cereal and let stand. Cream together shortening, sugar, salt. Add and mix eggs. Add buttermilk and water/bran mix. Mix flour and baking soda and add to above. Finally, add All-Bran Original cereal and mix until covered. Bake at 400 degrees for 20 min. This makes a batch of muffin mix that stores well in an ice cream pail or other large sealed container. It keeps 6-7 weeks in the refrigerator.
